A Perfect Lunch

It seems like recipes these days are so complicated. There are millions of trendy new ingredients, and while a lot of those are super delicious, it just feels good to eat something simple sometimes.

This dish itself is super versatile because you can prepare the asparagus and the egg several different ways and achieve the same delicious result.

This version involved grilling some asparagus and then cooking an over easy egg to put right on top. The yolk makes a seriously delicious sauce without having to do much extra, and the flavor and texture of the asparagus is amazing.

The only thing I didn't do was add some thinly sliced manchego cheese (I would have if it had been in my fridge).

Ingredients:

5-10 Stalks Asparagus
1/2 tbsp olive oil
1 egg

Directions: 

- Cut woody ends off of asparagus and toss lightly in olive oil
- Grill asparagus over medium heat for 8-10 minutes or until cooked to desired doneness
- When asparagus is 3 minutes to being done preheat a small nonstick pan to medium and drizzle in a little olive oil.
- Crack the egg right in the pan and cook until egg whites are opaque
-Season asparagus and egg with salt and pepper to taste.

**If you don't have access to a grill you could always roast the asparagus, and instead of frying the egg you could poach it, which I usually prefer but I was super lazy today.
